These cookies are not only quick and easy but they are super soft and chewy and DELICIOUS!!!  They make the perfect snack, on the go breakfast or dessert. 


  • 2 large ripe bananas
  • ½ C Almond or Nut Butter
  • 2 T flax Seeds (ground)
  • 1 tsp vanilla
  • 1 cup Rolled Oats (I use Bob’s Red Mill Gluten-Free Oats)
  • 1/3 cup dark chocolate chips 


  1. Preheat oven to 350F.
  2. Spray baking sheet with oil
  3. Grind oatmeal and flax seeds for a few pulses in a food processor or mixer.  Avoid turning the oatmeal into a fine flour so your cookies have a nice texture
  4. Pour all of your wet ingredients (bananas, almond butter, vanilla) into a large bowl and mix thoroughly
  5. Add your dry ingredients and chocolate chips into your wet mixture and blend together
  6. Drop a tablespoon size scoop onto your baking sheet 
  7. Transfer to oven and bake for 10 to 12 minutes
