This is more of a dessert than a snack so treat it as one instead of a “healthy snack” with the same sort of moderation you would have when eating desserts.
Ingredients:
- 2 C Fresh Coconut Meat or Coconut Creamer
- ¼ C Almond Milk
- ¼ C Cacao Powder
- ¼ C Maple Syrup
- 1 tsp Vanilla
- A pinch of Sea Salt
Instructions:
- Place all ingredients in a blender along with a handful of ice cubes and blend on high speed until smooth and creamy. If you want a thicker mousse, add 1 T chia seeds into the blender.
- Top with your choice of items (or just enjoy plain):

Shredded unsweetened coconut
